YUM!!

Basil Spaghetti with Cheesy Broiled Tomatoes

I saw this recipe in the Martha Stewart magazine while I was getting a pedi...the mag belonged to the salon so I could not rip it apart to take with me...so I snapped a few shots with my phone!! I made the dish Saturday night for Jason and I and it was quick, only required a few ingredients, and tasted delish!!

Ingredients:

  • 12 ounces spaghetti (I used whole wheat)

  • large beefsteak tomatoes cut into 4 thick slices (Jason picked up from a roadside stand!)

  • 3 tablespoons olive oil, plus more for the baking sheet

  • kosher salt and black pepper

  • Fresh mozzarella, grated (low fat Kraft)

  • Grated Parmesan

  • 2 cloves garlic, chopped

  • 1/2 teaspoon crushed red pepper

  • Torn fresh basil leaves, plus more for serving


  • Directions:
    1. Heat broiler. Cook the pasta according to the package directions; drain and return it to the pot.
    2. (It took 6 minutes for me)
    3. In a small saucepan, warm the oil with the garlic and red pepper over medium heat until fragrant, 1 to 2 minutes.
    4. Add the garlic oil, basil, ½ teaspoon salt, and ¼ teaspoon black pepper to the pasta and toss to combine. Serve topped with the tomatoes, additional basil, and shaved Parmesan.
