Pumpkin Goodness



Is it a cupcake or is it a muffin? Whatever you choose to call it....it's freaking delish!

They are what I call Pumpkin Muffins and I made them using only 2 (YES JUST 2) simple ingredients. I found this recipe online and wasn't sure how it was going to turn out (with no eggs, water, oil) but they were perfect.


Update: After making these more than once, I spiced them up by adding a dash of cinnamon sugar to the tops of each before baking, just gives it a little extra flavor and compliments the pumpkin nicely.

Ingredients:

1 box yellow cake mix
1 can of pumpkin


Directions:

1. Mix together cake mix and pumpkin until well blended.

2. Scoop and fill lined muffin tins, 3/4 full, making 12 muffins.

3. Bake at 350 for 18-22 minutes (or until golden brown, I left mine in for 20 minutes)

So easy and so good.....oh and healthy too!
